Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make cutlet today. We are making veg cutlet recipe. Here are the ingredients. 3 medium size potatoes boiled, peeled and mashed. Transfer the mashed potatoes into freeze for a while. So that the starch in it reduces. Do not cook potatoes completely. Keep these raw a little raw about 10%. So that the patties or cutlet doesn’t become soft. It gets nice & firm shape. Finely chopped capsicum, Finely chopped onion, carrot, 1/4 cup maida, 1/4 cup corn flour. You can use maida instead of corn flour. Salt to taste, homemade bread crumbs. You will get recipe for this on my other English channel. And I am updating the link in description box below. 1/4 tsp chat masala, 1/2 tsp cumin powder, 1 tsp red chili powder, Corinader leaves and 1 tsp garam masala and a little oil. To begin with let’s fry veggies. Heat up 1 tbsp oil in a pan. Add onion first and fry it until it turns a little soft. Onion has turned a little golden. Add capsicum, carrot and fry it really good. You can use raw veggies. But I make them a little soft. So that these can be easily eaten. I have fried these veggies for about 4 minutes. Turn off the gas now. Do not keep the gas on. If you add potato in very hot pan then it releases moisture. Turn off the gas and add potato. Let’s add all other spices in this. Red chili powder, garam masala, cumin powder, chat masala Green chili and salt to taste. Mix everything well together. You can either add bread crumbs in this veggie for binding If you don’t have bread crumbs, add poha.I have just washed pohe, not soaked these. Crush pohe with hands and add. The mixture gets nice binding due to this and also cutlets become crispy. Add finely chopped coriander. Mix everything well together. After mixing the mixture well together let’s make cutlets. Take the mixture depending on the size of the cutlet you want. Make round vade from it first. Like so. Flatten these and roll in the shape of cutlet. Transfer the cutlet vade in freeze once done. Then we will see next process. I have made cutlets. Transfer these into freezer for about 15-20 minutes to set. Let’s make a batter for the coating of cutlet. Take 1/4 cup maida, 1/4 cup corn flour in a bowl. Add salt to taste and mix well. Add a little water and make a little thick batter from this. Batter should not be thin. As you should be able to give coating. Add a little water at a time, no lumps of corn flour or maida should be formed. The batter is nice and even. No lumps of corn flour or maida. Take a cutlet, dip it in batter. After this take bread crumbs and coat the cutlet well with it. Coat the cutlet well in bread crumbs. Like so. This is single coating process. If you like super crispy cutlets then again dip the cutlet in the batter And again coat these well with bread crumbs. Cutlets get double coating and it is really very crispy. Let’s keep the ready cutlets aside. I will make the remaining cutlets in the same way. I have double coated all the vegetable cutlets. Heat up oil for frying. It is not complusory to deep fry. You also can shallow fry the cutlets. I mostly take cutlets into a ladle and drop these in oil. So that the oil doesn’t splatter on the body. Fry cutlets on low to medium heat until these turn nice golden It takes about 7-8 minutes. Flip the cutlets over after frying for about 3 minutes. Fry really good from other side too. Cutlets should get nice, even golden color from all sides. I have fried cutlets nicely from both sides for 7-8 minutes on medium heat. Do not hesten at all while frying. Otherwise these don’t get crisp and even color too. Take the cutlets out in a tissue paper. Looking really yummy!! I will fry the remaining cutlets too. I have fried all the cutlets. Looking fantsatic. It has been almost an hour aftre frying cutlets. Let’s see. You can see the crisp from all sides. Each and every cutlet is yet nice and crispy. Fantastic coating!! The speciality of these cutlets is you can make cutlets, Coat these well and either store them in freezer. These remain good in freezer for about 3 months. Or store cutlets in freeze.
