Mostly bread or pav is left over. If you think of making upma Then frankly much more oil is required. If you use more oil then it becomes khamang & can have it So we are trying to make it in minimum oil. Trying to make healthy but at the same time it becomes nice. I will guarantee this. For making masala pav I have taken 4 bread slices & cut into big square pieces. If you want then you can remove the edges. But mostly I don’t cut off. I cut into square shape with edges. Add 2 tsp oil in a pan. Heat up the oil well. Add 1/2 tsp cumin seeds. The tadka should be khamang. Let cumin seeds splutter. Don’t hurry as that recipe gets khamang pana of the tadka. So tadka should be khamang. When cumin seeds splutter add 1 cup finely chopped onion & mix well. Fry until onion gets light golden color. After frying the onion add 1 finely chopped tomato, 1/2 finely chopped capsicum & mix well. Fry for about 2-3 minutes. After frying everything add 1 tsp butter. Butter is needed. Butter gives nice & different flavor to masala pav So do add 1 tsp butter. Do not skip. After butter add 1 tsp pav haji masala. Pav bhaji masala gives nice taste to masala pav. Use any brand pav bhaji masala but do add. Add red chili powder to taste. I use bedgi mirchi for color. You can use any red chili powder. Add salt to taste & mix well. To avoid that after frying the masala & veggies add 3-4 tsp water. Mix well Cook this masala well for about 2-3 minutes. So that it gets moisture or a little gravy. After cooking masala for about 2-3 minutes well add bread pieces that we made earlier. Mix everything well together. Fry it well. Bread gets nice crisp & also it gets nice coating of masala. So fry for about 4-5 minutes without getting bored. After frying it nice & khamang When bread gets little crisp add lot of finely chopped coriander leaves & mix well. Nice, chamachamit masala pav is all ready.
