Today I will be making besan ki roti. This is a gluten free flatbread. Besan ki roti is very flavorful, healthy and high in protein. This can be served with dal or any gravy based dish or with yogurt. This recipe will make 6 rotis. For this we need: 2 cups of gram flour (besan) You can find this in Indian grocery store. 2 tablespoons of yogurt (dahi) 2 tablespoons of oil 1.5 tablespoons of dry fenugreek leaves also known kasturi methi. It’s available in Indian grocery store. Pinch of asafoetida (hing) 1/2 teaspoon of salt 1/2 teaspoon of chilli flakes 1/4 cup of rice flour It helps rolling the rotis. 2 tablespoons of butter or ghee. Ghee is clarified butter. Approximately 1/4 cup of warm water. First I will make dough. This should very firm dough. And then divide in 6 equal parts. Roll the besan ki roti. Cooking is a two-part process. Half the way it is cooked over skillet and then over open fire. Butter the roti, for the best taste serve it hot. To make dough in gram flour. First I will mix all the dry ingredients. Chilli flakes Salt Asafoetida And dry fenugreek leaves. If you don’t have dry, you can use the fresh or do without it. MIx it well. Now add oil. And yogurt. Mix it. It will become very crumbly. Now we will add the warm water slowly. Dough should be very firm and smooth otherwise it is hard to roll. As you see, this is very sticky to make the dough. May be one time you will have to wash your hands and oil it. I will wash my hands. Oil your fingers. And continue making the dough. Dough is looking very good. It’s smooth and it’s very firm. So cover the dough with damp cloth for about 10 minutes before we make the roti. It has been about 10 minutes. Dough is looking good. I will oil my fingers. And just knead little more. And divide this in about 6 equal parts. And roll them between both palms. Now take one ball and put it in rice flour from both sides. This helps rolling the roti. Now go this way then turn it around. Do it again. Turn it around again. If it is sicking then you can use little more flour and dust it. And roll it in about 6 inch diameter. Heat is on, medium heat. So to check if the skillet is ready. Just going to drop few water and see it has sizzled. So it’s done and here is the roti. This should take about 15-20 seconds. You will start seeing, it has start changing the color. And bubbles here and there. So if you see carefully you can see some of the bubbles. So it’s time to turn. And you see some brown spots. Wait for about 15-20 seconds. And you will some brown spots other side. And it’s time to put the roti over the open fire. I have the gas stove so you can put it right over the open fire. But if you don’t have gas and it’s electric then you can use cake cooling rack or similar to it. And put that over the burner so roti does not sick to the burner. And cooling rack works great. Go slowly. And just turn it around. Let it cook. And roti is looking good, nice color. You can really smell some of the fenugreek leaves. And butter it. Roti is ready to sever. Besan ki roti is looking great. And has a very nice aroma of fenugreek leaves. Today I will be severing this with mixed dal and palak paneer. I also enjoy this spicy roti with cup of tea. Enjoy.
