Baguette means ‘stick’ in French and we call it baguette because of its shape This bread is one of the my favourite bread. Let’s start if you’re ready! Pre-ferment: 1 cup whole wheat flour 1/2 cup water 1 1/2 tsp dry yeast Combine flour and yeast Add water and mix well Cover with a plastic wrap Let it rest overnight at room temperature Pre-ferment 1 cup water 4 tbsp orange juice 2 1/2 cups bread flour 1 1/2 whole wheat flour Salt 1/2 tsp dry yeast For the top : sessame and sunflower seeds Combine all ingredients except sessame and sunflower seeds Mix and knead them until you have a dough Put the dough in a lightly greased bowl and cover with a towel Let it rest at least 1 hour Knead the dough Divide into 3 pieces Shape each piece into slightly flattened oval Fold the dough in half lengthwise and seal the edges Flatten slightly and fold and seal again Use water to cover the top with sessame and sunflower seeds Let it rest for 25 more minutes Bake at 200C (425F) for 30 -35 minutes Baguettes are ready!
