Welcome to nishamadhulika.com Today we’ll make milk cake. Milk cake is one of the special sweet dishes of Western Uttar Pradesh and Haryana and everyone love it the most. Milk cake is prepared by cooking full cream milk until thick and dense in consistency. Let’s start with the procedure of making milk cake. For this we have taken 2.5 liter milk. First, boil the milk and cook until it gets thick. So, place the milk over flame for boiling and turn on the flame. Cook until it simmers once and cook until it gets dense. We can even stir the milk once or twice before it starts simmering. Keep the vessel with milk over a burner with high flame so that it starts boiling quickly. Keep constant check over the milk else, it might spill out from the vessel. So let the milk boil once. Milk has started boiling; now we’ll stir it at regular intervals and cook until thick. It can be bit time consuming. But if you are in a hurry, then take milk in two separate vessels and cook. Or if you are cooking on one flame, then keep the milk for boiling over another flame but make sure you stir it at regular intervals. So, if you are in a hurry, take milk in two vessels and cook until thick. Allow the milk to get thick. Milk has got thick in consistency and we have 1/3 quantity of milk. Milk appears thick in consistency. We have cooked milk for 1 hour on high flame constantly and kept stirring at regular intervals. With this the milk has turned thick. Now we’ll add 2 tsp lemon juice (1) into it so that this thick milk coagulates a bit. So, for coagulating milk, we are adding lemon juice to it. Reduce the flame, slightly. Take out lemon juice. We have 1 lemon, squeeze to take out the juice. We have taken 2 tsp lemon juice, so add 2 to 3 tbsp water into it. Stir the milk again. It is very important to stir the milk constantly and make sure you stir the milk bringing your ladle at the bottom of the pan. With this, milk will not stick to the bottom of the pan. Now, we’ll add lemon juice in the milk. We have added water in the juice. Add it in milk and mix well. Don’t stir the milk for at least half a minute and keep it as it is. After half a minute, stir the milk by bringing your ladle to the bottom of the pan. Now we’ll cook the milk until it gets thick in consistency. After this we’ll add sugar into it. Increase the flame again and cook the milk until it gets denser. Milk has turned grainy and thick, now add sugar into it. We have taken 250 grams (1 cup) sugar. Add in the milk and mix well. Cook until it gets thick and consistent. The flame can be kept high-medium-slow as per your requirement. When the milk gets thick, it starts spilling out on high flame. So, in this case reduce the flame to medium. If the milk still spills out, bring the flame to minimum. Keep stirring constantly. Now, pay more attention to the milk, as once you add sugar, it might stick to the bottom of the vessel. The ladle should be in constant motion. Milk cake mixture has turned quite thick in consistency. We are stirring it constantly on medium flame. We don’t have to cook the mixture over high flame now. We still need to cook for few more minutes. Let’s prepare a vessel to set the mixture. But keep constant check on the mixture. We have taken a small vessel, grease it with some ghee. We have added ½ tsp ghee in the vessel, now spread it nicely all over it. Vessel is nicely greased with ghee now. Mixture is almost ready, now add cardamom powder into it. We have taken 1 tsp green cardamom powder. Add it in mixture and mix well. For making cardamom powder, peel the cardamoms and crush them in ihe mortar pestle or ground it in mixture grinder (if in large quantity). After this strain the powder in sieve with big holes. The skin of cardamoms can be used while making tea and powder can be used for making sweet dishes. Mixture is ready to set. The mixture now appears thick in consistency and is not sticking to the bottom of the wok. We have kept the flame medium. Now turn off the flame and take out the mixture in vessel to set. Tap the vessel over the work station (platform) so that it gets even. Even it from top as well with help of a spoon Now keep it aside for 3 to 4 hours to set and once set, cut it in pieces. Milk cake is set, now take it out from the vessel and cut into pieces. For this,run the knife all around the milk cake like this. We have separated the milk cake from vessel with help of a knife and heat it slightly on flame to separate it from bottom. Keep the flame low and heat for 5 to 6 seconds so that it can be separated easily from the bottom. Turn off the flame now. Place a plate over the vessel and flip it upside down. Tap it like this. We have separated the Milk cake from vessel and now cut it into pieces. Use knife and cut into pieces. We have cut the milk cake into pieces, now arrange it on a plate. As you can see, the milk cake is lighter in color at the top and bottom but darker at the center. This is because when we keep the cake for setting, it cools from top and bottom quickly but takes time to cool at the center leaving it darker in color. We are done with cutting the milk cake and tempting milk cake is ready. Making milk cake is not at all difficult, the only drawback here is that it’s bit time consuming. A lot of patience and care is required as well. Make sure you stir the milk really well by bringing the ladle to the bottom of the vessel so that it doesn’t stick to the bottom. Add sugar and cook until it gets thick and dense in consistency. After this allow it to set. It takes 24 hours to set the milk cake. Keep it aside overnight and then cut into pieces to get mouth drooling and delicious milk cake.
