Today I will be making puran poli. This is a sweet flatbread filled with sweet lentils. This is a very popular bread from state of Gujarat or Maharashtra. This is served for breakfast with hot milk. Puran poli also can be served for snack. This recipe will make 10 puran polis. For this recipe we need: First to make dough, we will need 1/2 cup of whole wheat flour 1/4 cup of all purpose flour (maida) 2 tablespoons of oil Approximately, 1/3 of cup water. For filling we need 3/4 cup of toor dal also known as arhar dal. I have already washed and soaked it for about 6 hours. And as you see it has become double in volume. 1 cup of sugar 1 teaspoon of cardamom powder 1/4 teaspoon of nutmeg powder 1/2 teaspoon of turmeric We also need approximately, 3 tablespoons of oil And about 1/2 cup of whole wheat flour. Which will help us rolling the puran poli. First I will cook toor dal for filling. So I will cook dal on medium high. And I will add about 1.5 cups of water. And turmeric. Turmeric I use just to give the color. And it gives a nice yellow color to the filling. After it comes boil, we will reduce the heat to medium. And after that it should take about 25 minutes of cooking time. While dal is cooking, we can make dough. This dough should be very soft. That makes it easy to roll the puran poli. Whole wheat flour All purpose flour (maida) Oil Now mix it well. And as you see it has become crumbly. And we are going to add the water slowly. Dough should become very soft but not sticking to your fingers. So we can add little bit more water. Knead the dough really well. As you see dough is looking soft but not sticking to your finger. And this should rest for about 15 minutes at least before we make the puran poli. As you see, dal has started boiling and all this foam has came up. So I am going to remove this foam. And reduce the heat to medium. Cover it and let it cook. This should take about 25 minutes. Dal is ready. It has been cooking for about 26 minutes. And as you see this is very soft and that’s how it should be. Just I will let it dry little bit more. Maybe just couple of more minutes before I add the sugar. Dal is looking good, very soft and mushy. Going to add the sugar. And cook with the sugar, till it starts coming together and most of the water has evaporated. This should take about 7-8 minutes. This has been about 6 minutes. And as you see dal is getting together. So I am going to put the cardamom powder. And the nutmeg. Mix it well. This should be very pasty and very very soft dough. So just a another minute because after it cools off it will get dry. Filling is almost ready. You can try the filling as is, it tastes really good. Smell of cardamom and nutmeg, it makes it very delicious. And as you see this is ready. Filling is ready, it has come to room temperature. And dough has been sitting for about half an hour. So now we are going to divide the dough and filling in 10 equal parts. And make a dumpling and then we are ready to make the puran poli. So before dividing the dough, I am just going to knead it for few seconds. And as you see dough is very soft. So we will divide this in 10 equal parts. Now filling we have to do the same thing divide it into 10 equal parts. But as you see it’s very soft and that’s how it should be. If it is hard then you won’t be able to roll them as well. But they are soft but still we can bind them together. So now we are going to make the dumpling. Basically, fill the filling in the dough. So we are just going to put this dough in the dry flour and roll it about in 2.5 inch diameter. Hold it and put the filling in here. And cover it. You should do all these fillings at one time. So they can sit for about 5-6 minutes before you roll them. That way they roll better and you will see filling is not coming out from the sides. So these filled balls has been sitting 3-4 minutes. And now I am ready to roll them. So now first again you put it in the dry flour lightly and press it little bit. And the part you closed you should bring it up. And just press. I let them sit for few minutes, it makes it easy to roll and the filling does not come out from the sides. And just roll it about 5 inch diameter. As you see it was very easy to roll. Heat is on, medium. Let’s check the skillet if it is ready. So we are just going to drop water and as you see it is sizzling. So let’s put the puran poli. And you will see it will dry up from the top in about 10-15 seconds. And maybe start puffing couple of places. As you see the change in color. Time to turn the puran poli. And wait another 5-10 seconds. And put about 1/2 teaspoon of oil. And turn it again. See how nice color is. It has puffed up all the way. And we are going to turn it again. So both sides are golden brown and they are ready. Puran polis are looking great. I will be serving them for breakfast with hot milk to my friends who are visiting me from Mumbai.
