Today I will be making urad dal puris also known as bedmi kachori. This is a fried puffed bread mixed with lentil and spices. Urad dal puri is a North Indian delicacy. Delicious and festive. This is a excellent option with any meal. This recipe will make 8 urad dal puries. For this recipe we will need: 1/4 cup of washed urad dal Which I have already washed, soaked for 6 hours and drained the water. As you see it has become double in volume. 1 cup of whole wheat flour (atta) 1 tablespoon of coarsely ground fennel seed (saunf) 1 tablespoon of coarsely ground coriander (dhania) 1/2 teaspoon of salt 1/4 teaspoon of asafoetida (hing) 1/2 teaspoon of chilli flakes 1/4 teaspoon of dry ginger powder (saunth) 2 tablespoons of oil And approximately, 1/4 cup of lukewarm water. Urad dal puri is a gourmet bread. Simple to make. First I will blend dal into thick paste known as pithi. And then mix everything together with flour make dough. Roll them into puris and deep fry. Now you have puffed, crispy and spicy puri to enjoy. First I will blend dal. Use as little water as possible when you are blending dal. And it should be not very pasty, it should be coarse. Let’s check. It’s not ready yet. Just move dal around. And add little bit water. You may have to do this 2-3 times. Food processor works great. But I have such a little dal, I didn’t want to use the food processor. Pithi is ready. Let’s check it out again. Yes. It’s not very fine. And it looks great. First I will mix all the dry ingredients together to the flour. Here is coriander powder. Dry ginger powder Fennel seeds Asafoetida Salt And chilli flakes. Mix it together. Now add the dal paste. And mix it together. Now we are going to add little water. Add the water slowly. It’s coming together really good. You need to make a smooth and firm dough. So we can use little more water. So blending the dal and making the dough, I have used all together 1/4 cup of water. And knead the dough. So at this time, add little bit oil. About 1 tablespoon of oil. And knead it well. So if dough is knead well, puris will be more soft and light. Oil your fingers or palm. And again knead the dough. Dough is looking good. Now you can cover this with the damp cloth. And keep it for about 15-20 minutes before we start rolling the puris. So it has been about 15 minutes. So I will check the dough. And just oil your palm. And knead the dough again. It’s looking really good. Firm and it’s not sticky. Now divide the dough into 8 equal parts. So first I will oil my both palms. Now oil your palms again. And take the dough and make it into a ball. This is the last one. So now again cover these for about 5 minutes before we roll them. Heat is on, medium high. Now I will roll the puris. So first grease the rolling pin. And the surface you are going to roll the puris. Press it. And roll it with light hand. It’s easy. Roll it in about 6 inch diameter. Let’s do it again. And now let’s check if oil is ready to fry. So I am putting little piece of dough to check if oil is ready. See this is sizzling and it has come up. Oil looks good and frying pan should have at least 1 inch deep oil. So now we are ready to fry the puris. Press it. And turn it over. And it has puffed, looking very good, nice color. Take it out. We are ready to do the next one. And turn it around. Keep pressing till it puffs. And looks great. Urad dal puris are ready and looking superb. They are best when you serve them hot. When I visit India, my family will treat me for breakfast with urad dal puri and jalabi. What a treat. These puris are made for all the special occasions at my home.
