Welcome to nishamadhulika.com Today we will prepare Vegetable Cutlets these an be prepared for breakfast on weekends, for an evening snack or any party. Ingredients required : Potatoes -4 (medium sized)/250 to 300 grams Capsicum – 1 (finely chopped) Cauliflower – 1/2 cup (finely chopped) Cabbage – 1/2 cup (finely chopped) Carrot – 1/2 cup (grated) Flour (maida) – 2 tbsp Black pepper – less than 1/4 tsp Amchur (mango) powder – 1/4 tsp Coriander powder – 1 tsp Ginger – 1″long piece (grated or 1 tsp ginger paste) Green chilly – 1 to 2 (finely chopped) Salt – 1 tsp Red chilly powder – less than 1/4 tsp Green coriander – 2 tbsp (finely chopped) Bread slices – 6 (which have to be crumbled) Oil – to fry cutlets Firstly peel the potatoes which have been boiled before hand. Now let us crumble the bread slices, break bread slices into small pieces in put in the mixer. Break potatoes into fine pieces or grate them add grated carrots to it along with cauliflower, cabbage,capsicum, green chillies, ginger paste, corainder powder, amchur powder, red chiily powder salt (leave some or 1/4 tsp for later use) and bread crumbs. We can also soak bread slices in little water, squeeze out excess water and add in this mixture. Now mix all the ingredients till they blend in well. We will mix half of the bread crumbs made from 3 bread slices and keep aside the remaining bread crumbs (we will require it later to coat the cutlets). These bread crumbs help in binding the mixture together and cutlets do not tear while frying. Add green coriander and mix. Mixture for cutlets is prepared and now we will make the flour mix. Pour water in flour and stir till all lumps disappear. If water is added gradually then it takes lesser time to make the lumps disappear than putting all of the water at once. We need to make a very thin mix use 1/4 cup water for 2 tbsp flour to prepare this mix. Add salt and black pepper to flour mix ; mix thoroughly. Flour mix is ready so let us start preparing the cutlets. Turn on the gas, start shaping cutlets till then the oil will also be heated. Take some mixture in your hand give it a round/oval(as desired) shape then press to flatten it a bit. Dip this cutlet in the flour mix, immediately wrap the cutlets in bread crumbs. Press all over to give a defined shape and keep it on a plate. Similarly make cutlets with the remaining mixture and keep on a plate. We have shaped some cutlets in a round shape while the others are oval you can make cutlets of any shape. Here the vegetables we used for the cutlet are cauliflower, cabbage, capsicum and carrot. You can use vegetables according to your liking, put in your favourite ones and remove the ones less liked. The pan is heated to fry the cutlets. We can check if the oil is heated by putting little bit of the mixture in oil. If it rises up to the surface then the oil is heated else it will sink to the bottom. Put cutlets in hot oil you can put 3-4 cutlets at one time for frying. Fry cutlets till they turn brown on both sides. These cutlets can also be shallow fried place cutlets on the hot pan, pour some oil all around and shallow fry the cutlets on a low flame till they turn brown on both sides. If you feel like having less oil then shallow fry cutlets else deep fry them as desired. Now that the cutlets have turned brown in colour on both sides, take them out. Fry all of the cutlets in the same manner till they are brown then take them out. All of the vegetable cutlets have been prepared. Hot and crispy Vegetable Cutlets are ready. It is very easy to make these cutlets just remember not to put cutlets in insufficiently heated oil else they will tear or absorb oil excessively.
